Eolo: The Wisdom of Time

 

There are many attributes of Eolo that make it the icon at Trivento. At the forefront of these is the four hectare vineyard planted in 1912 in Luján de Cuyo. Resting above the northern bank of the Mendoza River, it sits at an altitude of 983 masl. Eolo Winemaker Germán Di Césare carefully monitors segmented areas of the vineyard that were partitioned based on soil composition. Each micro parcel displays its own unique expression in the wine, or “nuances of one essence”.

The manual harvest moves forward in stages determined by Di Césare based on observations at the micro parcel level. At the winery, small Malbec bunches are selected by hand, then by grape, leading to a gentle roll crush, and the transformation begins.
