The whiskey-reminiscent nose and malty flavor of genever, the grandfather of gin, makes this a particularly perfect cocktail for those looking to sneak a bit of juniper into their cocktail routine during the colder months. While the Bols can be substituted with standard gin in a pinch if genever is hard to find, bartender Chris Rue of Marietta in Brooklyn, New York, suggests something with assertive juniper notes, such as Junípero.

Ingredients

2 ounces Bols Genever
¾ ounce lemon juice
¾ ounce simple syrup
½ ounce Cynar
¾ ounce egg white
Splash (¼ ounce, to taste) sour cocktail cherry juice
2 dashes of ginger lemon bitters (such as Hella Bitters Ginger Lemon)
Large peel of lemon, for garnish

Directions

Add all ingredients but the bitters and garnish into a cocktail shaker. Dry shake all the ingredients (vigorously and without ice). Once the egg has emulsified, fill shaker with ice and shake well again. Strain into a chilled coupe glass. Garnish with a lemon twist and two dashes of lemon ginger bitters on top of the foam.
