Recipe courtesy Bryan Dayton, director/co-owner, OAK at Fourteenth, Boulder, CO, and Acorn, Denver

Rose water, raspberries and citrus make up this complex yet low-alcohol libation.

“Rosie’s Return is the perfect light, botanical-inspired apéritif,” says Dayton. “I love it because it’s well balanced and has a nice diversity to it.”

Ingredients

2 ounces raspberries, plus several reserved for garnish
¾ ounces gin
½ ounce lemon juice
½ ounce simple syrup
2 dashes orange bitters
2 drops rose flower water
4 ounces sparkling rosé

Directions

Add 2 ounces of raspberries to a cocktail shaker and muddle gently. Add gin, lemon juice, simple syrup, bitters and ice to shaker. Shake until chilled. Strain into a chilled flute, top with the sparkling rosé and garnish with a few extra raspberries.
