Love Dessert? The Sweet Madeira Flip Is For You

Courtesy Alex Laos, General Manager, Bouchon, Yountville, CA.

Madeira’s sweet and savory complexity adds a lot of depth to cocktails with notes of dried figs, walnuts and savory umami,” Laos says. “The history of this fortified wine is compelling as well, as it was America’s forefathers’ beverage of choice for toasting to events and accomplishments,” making this rich, dessert-y (and low-alcohol) cocktail a great choice for celebrations.

How to Make a Madeira Flip

Ingredients

1 ½ ounces Madeira, such as Rare Wine Co. Boston Bual Madeira
½ ounce Amaro Nonino
¼ ounce simple syrup
¼ ounce heavy cream
1 whole egg
Freshly grated nutmeg, for garnish

Directions

Combine all the ingredients in a shaker without ice, and dry-shake for 10–15 seconds.

Add ice and shake again until chilled.

Fine strain into a coupe and garnish with grated nutmeg.
