A loose interpretation of the tri-color candy staple, this autumnal drink has a distinct confectionary note. Apple cider, reduced on the stovetop to concentrate its fall harvest flavor, mixes with rye’s spice and orange liqueur, while an egg white* adds richness, echoing the creamy texture of candy corn.

Shake all ingredients without ice, to emulsify the egg whites. Add ice and shake briefly again to chill. Strain into a coupe glass. Garnish with three pieces of candy corn speared on a metal pick (or served on the side).
*This drink also works without the egg white, but it will seem more acidic, so dial back the lemon juice a bit.
*How to Make Apple Cider Reduction
Boil 2 cups unfiltered apple cider, uncovered, stirring occasionally, until the liquid has reduced to about ½ cup (about 15–20 minutes). Makes enough for 3–4 drinks.
