Comfort Cooking During Quarantine

With most people sheltering at home, comfort cooking is making a comeback – especially easy-to-prepare, family-friendly recipes. James Beard award-winning author and cheese expert Laura Werlin has paired up with Silverado Vineyards winemaker Jon Emmerich to present a Double Cheddar & Tomato Jam Grilled Cheese Sandwich recipe from her book, “Grilled Cheese, Please!” paired with Silverado Rosato.

Based on the popularity of grilled cheese and tomato soup, the recipe is a variation on that theme, infusing the rich tomato flavor directly into the sandwich. The double cheddar payoff is cheese on the inside of the sandwich, and on the outside. The result is a little sweet, a little savory, and a little crunchy. 

Silverado Vineyards winemaker Jon Emmerich

Jon Emmerich, who just celebrated 30 years as Silverado’s winemaker pairs the sandwich with the 2019 Silverado Rosato, a single-vineyard Rosé made of Sangiovese from one of Silverado’s six estate vineyards.
