It really depends on the system you are using. Most vacuum air pump systems will keep wine fresh for up to 7-10 days. Systems that utilize air removal along with temperature control will typically keep wines fresher closer to the 10 days and possibly longer if the wine can handle a bit oxidation. Simple argon and nitrogen gas systems, like Private Preserve
, will keep wines fresh for about the same amount of time. However when using systems that work off a temperature controlled system in conjunction with an inert gas, wines can keep their integrity for up to a month or so. The major point being that using something that both preserves the wine as well as keeps it at the proper service temperature will lengthen the amount of time the wine will last.
