Throughout a long career in restaurants in both Japan and the United States, Graves developed a deep understanding of Japanese language, cultures and cuisines. He also developed a serious passion for saké and shochu. In 2014, he became the only American to reach the finals of the Sake Service Institute’s World Sake Sommelier Competition in Japan. At Skurnik since 2017, he strives to convey the untold stories of craftmanship behind saké and shochu to American consumers.
