Apple revivers
It’s easy to understand Davis and Dolginow’s dedication when you savor their tasty ciders, but they’re also passionate about restoring lost apple varieties and cider-making traditions. They’re always on the lookout for heirloom apple varieties in Vermont and upstate New York, and they often graft them into their orchards. These efforts result in Lost Apples, a limited-edition cider released every year. They also pay tribute to various regions with the use of native yeast strains, and they’ve branched out into barrel-aged and low-alcohol ciders.
