One of the more serious impediments to running a good wine program at a restaurant or bar is the desire to offer variety by the glass while keeping the wine fresh. It's made more difficult when not every person who pours the wine does so with the oversight and care that the beverage director or bar manager would.
Offering lots of wine by the glass can mean lots of open bottles that sit idle while the contents become less than desireable. I've tried the vacuum stoppers. They're ok for home use, but the gaskets on the pump wear out and the stoppers can get mishapen and tired in a commercial setting.
The Private Preserve Wine Preservation Spray solves my problem perfectly. I currently offer 10 wines by the glass and my restaurant only does formal dinners two nights per week. Since we are a golf club, rainy days can mean slow business. There is tremendous opportunity for open bottles of wine to sit idle. Add to that the fact that I am not at the restaurant during the day to oversee what the servers pour at lunch and you'll understand why I need the security of a good wine preservation program. This one is the best I've used.

It takes me a week to drink a bottle of red wine. I tried this product and it works well, but you have to add the gas after each pour -- so the gas doesn't last very long. When you pour a glass of wine, you also pour out some of the gas and you have to add more gas. I bought a wine stopper/pourer made by Oxo. After I open the bottle I pour a glass of wine and put on the stopper. Then I add plenty of the wine preserver gas through the stopper valve and close the stopper lever. When I pour the next glass, I invert the bottle first and then open the stopper lever gradually. This lets the wine trickle out and prevents any of the gas from escaping. I don't have to add more gas. It works well for me.

This is the ONLY wine preservation system that actually works. Consider: when you so carefully aerate your wine prior to serving to improve its taste, you introduce the air that will ultimately lead to the formation of acetic acid in the long term (ie spoilage) Re-sealing wine from the decanter will thus not prevent spoilage. BUT sparging the remaining wine in the bottle with inert gas after decanting will allow you to keep that half bottle of wine in good shape (or when serving wine straight from the bottle, for that matter) Its how the pros protect their wine in those big tanks. This is good stuff!

Keeps wines and licquors from losing flavor, especially if they will be stored for a long time, like port or chambord. Keeps oxygen sensitive vitamins (like C) from losing their potency.
